Vegetarian Frittata

Quick & easy vegetarian-friendly frittata.

Ingredients

8 Large Eggs

1 cup of shredded Cheddar Cheese

1 cup of Broccoli diced

2 Superfood Brekkie Links diced

1/2 cup non dairy unsweetened milk (cashewmilk is fav)

1/2 stick of butter

1 tbsp garlic powder

1 tbsp onion

1 sprig Fresh Rosemary chopped (optional)

Instructions

  1. Dice the Superfood Brekkie links and broccoli.
  2. Butter the skillet.
  3. Put the links and broccoli in the skillet on medium heat.
  4. Season and allow this to cook for about 3-5 minutes.
  5. While that’s cooking, crack and scramble eggs.
  6. Add cheddar and milk to egg mixture.
  7. Evenly distribute links and broccoli in the skillet.
  8. Pour egg mixture over into skillet.
  9. Gently Mix.
  10. Pop in oven on 350 and allow to cook until solid.
  11. ENJOY!
